What is a snail service?
A snail service is all the equipment, utensils and accessories needed to prepare, cook and serve snails at the table. This service is designed to make it easier and more elegant to enjoy this traditional French dish, often prepared with garlic butter and parsley.
Snail plate: a special plate with cells, usually 6 or 12 snails, in which the snails are placed with their garnish. This plate can be placed in the oven to cook the snails and is then served directly at the table.
Snail tongs: these are small utensils used to hold the snail shells tightly so that they do not slip while eating.
Snail forks: small two-pronged forks, long and thin, designed to easily remove the snail from its shell.
Prepare a snail butter, a mixture of butter, chopped garlic and often parsley, to garnish each snail before cooking. Place small napkins on the table so that guests can wipe their fingers after handling the snails and their shells.
Snails are often served with dry white wine or champagne, so provide appropriate glasses.
