What's the difference between a colander and a chinois?
- A colander is a perforated utensil with holes or slots, usually on the sides and bottom. Colanders are often made of metal, plastic or stainless steel. They are mainly used to drain solid foods such as pasta, vegetables or washed fruit. It is also used to rinse ingredients under water.
- The chinois, also known as the passe bouillon, is conical in shape. It is made of stainless steel, aluminium or mesh. It has fine perforations on the bottom and sides. The strainer is designed to filter finer liquids such as stocks, sauces or soups. Its finer perforations allow it to trap smaller pieces and particles than a colander.
In short, a colander is mainly used for straining solid foods, whereas a strainer is specifically designed to filter liquids and retain small particles. The choice between a colander and a strainer therefore depends on the type of cooking task you are undertaking.
What is a chinese strainer?
A colander and a strainer are two different kitchen utensils. However, some people use the terms interchangeably to describe a colander with similar characteristics to a chinois.
What is a chinois?
This term generally refers to a kitchen utensil that combines the characteristics of a chinois and a mesh. A colander is often used to filter liquids and sauces while retaining small particles:
- The strainer, usually in the shape of a stainless steel cone, has fine perforations on the bottom and sides. It is used to filter liquids and separate solid particles, such as food particles, from stocks, sauces and soups.
- mesh is a fine cloth, often made of cotton or linen, used as a filter to separate liquids from solids. It is often used to filter liquids or to drain food.
What if you don't have mesh in the kitchen?
If you don't have a chinois in the kitchen to filter liquids and separate particles, you can use the following common alternatives
- Fine sieves, with tight meshes, made of stainless steel or plastic, with small perforations;
- Sieves with meshes fine enough to achieve the desired degree of filtration;
- Cheesecloth or muslin: use a thin piece of cloth to filter liquids. Place the cloth over a container and pour the liquid through the cloth, which will trap the solid particles;
- A clean paper coffee filter can be used as an alternative. Place it in a sieve and hold it over a container, then pour the liquid through the filter;
- Double strainer: use two different sized strainers, placing the finer one on top of the larger one for finer filtration;
- Use gravity: to separate liquids from solids, you can also leave the mixture in a container.
