Create a seafood or oyster platter
The composition of the seafood platter varies according to place, person, season or budget, but it always evokes pleasure and refinement, especially on the Christmas table. Often associated with the word "tasting", the seafood platter remains an occasional pleasure for some, or a regular one for others who live by the sea, or who work in the fishing or oyster farming industries, and who will choose quality products with a tasting of fresh oysters from the House of Gillardeau, from Cancale, Marennes d'Oléron oysters, from the Vivier d'Oléron or from Quimper in French Brittany. Whether in a restaurant, with starred chefs, at a caterer's, on a pier table or on the boat itself, seafood lovers will want to display these products before they eat them. The large white Longchamp ceramic oyster platters are still a very trendy vintage dish for presenting the treasures of the sea and can still be found on ebay, but their price may put you off. The seafood platter is often presented in a circular stainless steel tray, on a bed of crushed ice, with the smaller pieces around the edge (oysters, whelks...) and the larger pieces towards the centre (lobsters).

There are many different types of trays. Stainless steel is an excellent container for ice as it is resistant to cold temperatures and enhances the white colour of the ice against a grey background. The bowls retain water from melting ice and are very strong when it comes to transporting compositions weighing several kilos. Depending on the number of guests, there are trays for 1 or 2 people, and large trays with a diameter of 45 cm, in which you can present a variety of seafood for 6 people: oysters, shrimps, crab, prawns and crab cakes make an exceptional platter. For even more unusual presentations, such as the composition of a royal seafood platter, there are double superimposed trays, raised on a luminous stand, or equipped with a stainless steel bowl to collect the shellfish.
