They can also be used in the kitchen to keep food warm instead of using the oven. These products are available in different depths. The chafing dish is mainly made of stainless steel (inox) and has a GN or round tray that is kept at the right temperature by the water bath in the chafing dish. It does not produce enough heat for cooking. If you choose a chafing dish with burners, you can also change the burners to use gel fuel instead of liquid fuel. If you choose an electric unit, you can add an induction hob. Accessories also include a spring-loaded heating element.

The chafing dish, an indispensable bain-marie for buffets
The chafing dish is the essential element for the presentation of hot meals and food in buffets, breakfast buffets and catering buffets. The chafing dish, also known as a professional bain-marie, is not a cooking utensil but a tool for keeping food warm, generally at temperatures between 55 and 80°C.
Chafing dish: electric, burner or induction
In terms of energy compatibility, chafing dishes are divided into 3 categories: the burner bain-marie, the professional electric bain-marie and finally the induction bain-marie, which is heated by a separate, adaptable induction plate. The burner category is obviously recommended for nomadic or outdoor installations. Stellinox offers a wide range of chafing dishes, depending mainly on their size. You'll find GN 1/1 rectangles, GN 2/3 and GN 1/2 rectangles and round chafing dishes. Rectangles are compatible with standard catering containers. In terms of finish, there are chafing dishes with hinged lids that close with a brake and others with simple, separate lids that fit into a special slot. Some can be fitted with glass lids so you can see the food even when the lid is closed. Some are stackable for easy storage. Depending on your budget and requirements, you can also choose between 18/10 and 18/0 stainless steel.
