Stainless steel dishes sizes

There are a wide variety of shapes of stainless-steel dishes: round stainless-steel dish, oval stainless-steel dish, square stainless-steel dish, rectangular stainless-steel dish, and depending on their use we use the term stainless steel dish or stainless-steel tray. Some stainless-steel dishes can measure up to a metre long!

Stainless steel dishes for presentation and service

In this collection of stainless-steel dishes we will find rectangular stainless-steel dishes, round, square or oval shaped, more or less "flat" stainless steel platters, with classical shapes, or Louis XV design, which is characterized by curved lines around the perimeter of the platter.

The choice of dish will depend on its use: a small "pastry” tray will be quite suitable for tasting chocolates, or for presenting the bill in a restaurant. A stainless steel "torpedo shaped" dish, long and narrow, will be perfect for presenting large pieces of meat. A hollow dish, oval or round, will be ideal for the presentation and service of meats in sauce, especially in a collective restaurant.

For the presentation of seafood, a round dish with a more or less high rim will be preferred, but Stellinox offers also oval platter for this presentation.

For other, more specific models, we will speak of a tray, such as the serving tray, fitted with handles, or the meal tray, which is a stainless-steel tray with compartments allowing the meal to be presented directly in the different compartments, used in collective restaurants and administrations, and often in the army.

Stainless steel tray for oven cooking

Stainless steel is resistant to high temperatures, and will go from the freezer to the oven without any problem. Therefore, there is a wide range of stainless-steel dishes intended for baking. Please note that stainless steel cannot be used in a microwave ovens.

Before buying your stainless-steel dish for cooking in oven, make sure that the outer dimensions of the dish allow you to use it in your oven.

Depending on the recipe you choose, choose a shallow oval or rectangular dish, for vegetable or pasta gratins, or a deeper one for desserts or dishes where your recipe requires multiple layers.

Stainless steel dish for refrigerated counters

The stainless-steel dish, or stainless-steel tray, has always been used in refrigerated counters. It often comes in two grades of steel, 18% stainless steel or 18/10 stainless steel, and the choice is made according to the food that will be displayed in these dishes: if the contents contain a lot of salt or blood, the 18/10 stainless steel dish is the best choice, whose resistance to corrosion is strengthened with the nickel component.

There are specific models such as the “liver” tray with a stainless-steel grid, which prevents livers for example from bathing in blood.

There are also stainless-steel gratin dishes, especially for the catering, but also stainless-steel small dishes, and the gastronorm container which is also used in the counters.

There are also specific shapes, with a "cut" angle: this makes it easier to catch and move dishes.
