The advantages of stainless steel in the catering industry

New regulations in France

New regulations have changed the way French catering industry is run. These new laws require that public and private catering practices in the use of plastic containers and cutlery be eliminated or considerably modified.

The establishments concerned by these laws are

- School catering (from nursery to high school)

- Establishments providing care for children under 6 years of age (crèches, nurseries, day-care centers and kindergartens)

- University restaurants

- Any other public administration or establishment (administration restaurants, public medical and social services, army, penitentiary, public administrative establishment, etc.)

- Other private establishments mentioned in L. 230-5 of the CRPM (health, social, medico-social and prison establishments)

- Other private establishments not mentioned in L. 230-5 of the CRPM (private company restaurants, etc.)

EGALIM French Law

The law of 30 October 2018, known as the "EGALIM" law, provides for a series of measures relating to public and private collective professional catering. These measures promote access for all to healthier, safer and sustainable food by, among other things, reducing the use of plastic in the food industry.

As of 1 January 2020, this EGALIM law (Art.28) prohibits the provision of the following single-use plastic utensils: cups, glasses, plates, straws, cutlery, steak skewers, lids, meal trays, ice cream cups, salad bowls, boxes and stirrers for drinks. Plastic water bottles are banned from school canteens.

By 1 January 2025 at the latest, the use of plastic cooking, heating or serving containers in these establishments will be banned and replaced by "inert and sustainable materials".

AGEC French law

As a result of the AGEC Act, from 1 January 2022 home deliveries of meals to the elderly or people whose state of health requires it must be made using reusable tableware, cutlery and containers for transporting food and drink. Disposable packaging is prohibited.

In the light of these new regulations, the reuse of containers made of inert and durable materials such as stainless steel, porcelain or glass appears to be a sustainable solution that should be considered by public catering managers.

Some studies confirm that reusable stainless-steel containers are better for the planet and have less impact on the environment:

- Endocrine disruption, which is exacerbated when plastic containers are heated or worn out;

- Contribution to climate change

- Depletion of energy resources

- Net water consumption (balance in favour of washing stainless steel containers compared to the volume of waste generated in the manufacture of plastic).
