can we place a stainless-steel dish in the oven ?

Wondering if your stainless steel dish is oven safe? The answer is yes.

You know and use glass dishes such as Pyrex, or ceramic dishes such as Le Creuset, or ceramic dishes such as Emile Henry, or porcelain for baking, but do you use stainless steel to cook like a chef? Generally speaking, if your pan is made of metal (stainless steel, cast iron, aluminium...), it is made for cooking in the oven and can withstand high temperatures. You just have to make sure that your utensil does not have plastic or wooden handles. You can easily grill meat or roast vegetables in your pan if your pan does not have plastic handles or if the handles are made of metal.

Many dishes are called "roasting dishes" and are made of stainless steel or aluminium.

Stainless steel can withstand temperatures of up to 400°C and more... so you can put your stainless steel dish in a traditional oven or even a wood-fired oven!

A popular choice in professional kitchens, stainless steel is ideal for withstanding relatively high temperatures and is a durable and hygienic material. Quality stainless steel pans ensure even heat distribution. Chefs say it is a very popular material.

Stainless steel cannot be microwaved, except.... In general, metal should not be used in a microwave oven because metal is sensitive to microwaves, which cause electrons to move in conductive objects. So don't use a metal dish in your microwave, regardless of the metal.

However, this answer must be qualified by the standard published by AFNOR in January 2023, NF D21-314, which describes a method for determining the suitability for microwave heating of metallic or partially metallic articles used as containers for food or beverages.

This standard specifies the principle and operating procedure, the marking, labelling or instructions for use that must be provided to the consumer, and the recommendations that must be given for the correct use of metal dishes (including stainless steel) that can be used in the microwave: place the container in the centre of the oven, not near the sides, do not use a metal lid, etc.

Shapes without protruding corners can be used in the microwave, as they avoid the point effect responsible for electric arcs. In conclusion, only use metal containers in the microwave if the manufacturer has assured you that they are compatible with the microwave oven.

Stainless steel dishes in the oven

All stainless steel dishes are ovenproof. You can therefore reheat a serving dish in the oven, even if it is not normally used for cooking. We remind you that you must check that your dish does not have plastic or wooden handles.

Which materials are not oven safe?

The material that's not oven safe is plastic. All types of plastic. When heated, plastic can melt and release toxic substances or catch fire, making it unsuitable for direct exposure to the heat of an oven.

How can you tell if a dish is ovenproof? What is the symbol on an oven-safe dish?

There are a number of things you can check to see if a dish is ovenproof. When in doubt, it's always a good idea to check the manufacturer's recommendations or choose materials and brands that are recognised for their oven safety.

- Labelling and symbols: look for specific labels or symbols on the dish or its packaging; terms such as 'oven safe' or 'ovenproof' indicate that the dish is oven safe.

- Commonly used symbols: an icon representing an oven, often stylised with a door and racks inside, or a number indicating the maximum temperature, sometimes accompanied by a small drawing of an oven. There is also a heat symbol with wavy lines, sometimes accompanied by a maximum temperature.

- Material: Most ceramic dishes are safe for oven use, especially if they are glazed. Borosilicate glass dishes, such as those made by Pyrex, are generally oven safe. Stainless steel or cast iron pans are oven safe. Heat-resistant silicone dishes are generally oven-safe up to about 230°C.

- Manufacturer's instructions: consult the instructions supplied with the dish, which often include information on heat resistance.

- Absence of non-heat resistant components: make sure that the dish has no non-heat resistant plastic parts, handles or decorations, unless they are removable or specifically marked as oven safe.

- Appearance and quality: ovenware is often thicker and sturdier to withstand high temperatures without cracking or warping.
